Becky's Pet Care Chili Recipes
Angela’s White Chicken Chili
16-ounce chicken stock
4 cans white beans, left un-drained (I made my own from dry beans, just FYI as I think it makes it thicker too)
5 cups cooked chicken, shredded
24-ounces salsa
8-ounce pepper jack cheese, grated
2 teaspoon ground cumi
2 cloves garlic, minced
Black or white pepper to taste
1 can rotel or tomatoes with chilis
1 Cup mozzarella, shredded
Cook in a crock pot or on stove – simmer at least 3 hours or longer. Serve with Crushed tortilla chips.
John’s Montana Chili
1 large can of diced tomatoes
1 large can of crushed tomatoes
1 jar of chili sauce
3 habanero peppers
1 jalapeno peppers
1 cubanelle chili pepper
2 pablano chili pepper
2 chipotle chili pepper
Cayenne pepper
Crushed red pepper
1 white onion
Chili powder
Cocoa chili powder
Chobula chili-lime
Green pepper tabasco
Habanero tabasco
Ground bison
Cubed steak (preferably chuck or round steak though you can use the more expensive rib steak)
Put cans of tomatoes into crock pot and set to warm
Generously season steak with Morton seasoning salt and cook until medium well done. Drain steak and add to crock pot. Cook bison until medium (still pink inside – since it is ground, it will overcook if you cook well done before putting in crock). Drain bison and add to crock pot.
Finely chop peppers and put into crock pot (the quantity and type of peppers can be adjusted to modify the heat of the chili – less habanero and jalapeno to make milder, etc.). Chop onions and put into crock pot. Add 2 tsp crushed red pepper. Add 3 tsp chili powder. Add 2 tsp cocoa chili powder. Add 1 tsp Chobula chili-lime tabasco. Add 1 tsp green pepper tabasco. Add 1 tsp habanero tabasco.
Cook on high for 7 to 8 hours, stirring occasionally. Take pot out of crock and place in refrigerator overnight to allow flavors to really blend. Re-heat in crockpot (heating in a microwave can change the flavor substantially).
Becky’s Black Bean Chili
(Quick, easy, kid friendly)
1-1½ pounds lean ground beef
1-2 can black beans
1 large can diced tomatoes
Salt, pepper, onion power, garlic powder
Brown ground beef. Season to taste. Add beans and tomatoes. Heat on medium heat until hot throughout. Reduce heat. Simmer for a minimum of 20 minutes. Longer if you have time.
